In fact, the secret of the Chishui river lies in its unique brewing environment. From Erlangtan to Maotai Town, the 40 km Valley is almost all near the river cliff, the valley seems a warm embrace, its unique temperature, humidity, soil, microbial community, so that there is a unique advantage in breeding high-quality sauce wine. This is also the most mysterious and moving part of the Chishui River. It is the pride of the Chishui River. The core of this fine wine can not be brewed out of here.
In addition, the purple-red soil in the Chishui River Basin has high content of sand and gravel, loose soil, large pores and strong permeability. When surface water and groundwater merge into the earth and run to the Chishui River, they are not only reduced to sweet and delicious natural spring, but also take away many beneficial minerals in the soil by the way. This also makes Chishui River an ideal wine making water.

Soil acid and alkali moderate, which gravel and sandy soil body content is high, permeability is very good, groundwater, surface water through the red soil layer, beneficial to the human body when a variety of trace elements are dissolved, through layers of infiltration filtration, forming clear spring water.
Because of the hot, windless and high temperature in Maotai Town, the microbial community is easy to grow and not easy to be scraped off, and participates in the brewing process.
