好酒需好糧,好糧配好水
而赤水河為何被稱為中國白酒的母親河呢?是什么原因讓一條全長僅500公里的赤水河,流經的地域卻誕生了中國60%的名酒?
其實,赤水河的秘密,就在于其得天獨厚的釀造環境。從二郎灘到茅臺鎮的40公里河谷,幾乎都是臨河高崖,河谷處仿佛一個溫暖的懷抱,其特有的溫度、濕度、土壤、微生物群,使這里具備孕育優質醬酒得天獨厚的優勢。這也是赤水河最神秘,最動人的部分,是赤水河引以為傲的,走出這里便釀不出這好酒的核心所在。
另外赤水河流域紫紅色的土壤中砂質和礫土含量高,土壤松散,孔隙大,滲透性強,地表水和地下水融入大地奔向赤水河時,在被層層過濾、吸收、轉化中,不僅還原為清甜可口的天然山泉,還順便帶走了土質中的多種有益礦物質。這也讓赤水河水成為十分理想的釀酒用水。
如今,赤水河仍然固守著最好的自然環境,作為長江中上游惟一一條未被開發的一級支流,至今這條河上還沒有任何水利水電工程,也是干流無壩的未有化工廠污染的長江唯一支流。
由赤水河滋養的河谷內岸,則是茅臺、郎酒等釀造頂級醬酒的米紅粱生長的寶地。純天然、無公害、無污染的綠色生態,護佑著米紅粱的生長,也芬芳了赤水河的醬香。
有科學家曾對成品酒的成分進行分析,發現酒中的微生物多達400多種,它們中的某些種類通過一系列復雜的組合,催生110多種芳香成份,自然形成了其獨特品位。

In addition, the purple-red soil in the Chishui River Basin has high content of sand and gravel, loose soil, large pores and strong permeability. When surface water and groundwater merge into the earth and run to the Chishui River, they are not only reduced to sweet and delicious natural spring, but also take away many beneficial minerals in the soil by the way. This also makes Chishui River an ideal wine making water.
Today, the Chishui River is still the best natural environment, as the only untapped tributary of the upper and middle reaches of the Yangtze River, there are no water conservancy and hydropower projects on this river, and it is also the only tributary of the Yangtze River without dams and chemical plant pollution.
The inner Bank of the valley, nourished by the Chishui River, is the precious land for the growth of rice-red sorghum, which is used to make top-quality sauce such as Maotai and Langjiu. Pure natural, pollution-free, green ecology, protect the growth of rice red sorghum, but also fragrant Chishui River sauce fragrance.
Scientists have analyzed the composition of wine products and found that there are more than 400 kinds of microorganisms in wine. Some of them, through a series of complex combinations, produce more than 110 aromatic components, and naturally form their unique taste.

茅臺鎮是中國醬酒圣地,域內白酒業興盛,茅臺鎮域內資源獨特,微生物體系奇異,具有得天獨厚的釀造環境,以盛產美酒而聞名海內外,被譽為“中國第一酒鎮”“世界醬香型白酒主產區”“中國酒都核心區”。
茅臺鎮地處赤水河谷地帶,地勢低凹,受海拔高度和巖石風化后成土母質的影響,茅臺地區紫色土廣泛發育。土壤酸堿適度,其中的礫石和沙質土體含量高,滲水性很好,地下水,地表水通過紅壤層時,對人體有益的多種微量元素被溶解,經過層層滲透過濾,形成清洌泉水。
茅臺鎮的炎熱、少風、高溫,使微生物群在此因而易于生長而不易被刮去, 大量參與酒的釀造過程。風速小,冬暖、夏熱,少雨、少風的特殊小氣候十分有利于釀造酒微生物的棲息和繁殖。
Maotai Town is a sacred place for sauce and wine in China. It has unique resources, unique microbial system and unique brewing environment. Maotai Town is famous for its fine wine production both at home and abroad. It is known as the world's first wine town, the main producing area of sauce-flavor liquor and the core area of China's liquor capital.
Maotai Town is located in the Chishui River valley with a low-lying terrain. Influenced by the altitude and the parent material of soil-forming after rock weathering, purple soil is widely developed in Maotai area. Soil acid and alkali moderate, which gravel and sandy soil body content is high, permeability is very good, groundwater, surface water through the red soil layer, beneficial to the human body when a variety of trace elements are dissolved, through layers of infiltration filtration, forming clear spring water.
Because of the hot, windless and high temperature in Maotai Town, the microbial community is easy to grow and not easy to be scraped off, and participates in the brewing process. The special microclimate with small wind speed, warm winter and hot summer, less rain and less wind is very conducive to the habitat and reproduction of wine-making microorganisms.
